Salmon, is a very popular seafood in the United States today. Salmon maybe smoked, grilled, broiled, baked, or poached. I prefer smoked or grilled.
Smoked salmon, take one 10 to 12 pound Salmon. Marinate the salmon in a mixture of olive oil, lime juice, fresh garlic and and dill. Place five to ten pounds of high-quality charcoal in smoker, prepare a couple of pounds of Hickory which ships by placing them in about a water. The Hickory which Chips will be added periodically during cooking process. Smokers maintain a temperature of between 160 and 180 Fahrenheit. It can take 6 to 10 hours to smoke a 10 to 12 pound salmon. When the salmon turns an opaque pink color it is ready. leftover salmon may be frozen. Be very careful to remove air in the package as air will cause the salmon to freezer burn.
Grilled salmon, uses the same marinade and as the smoked Salmon. Salmon is cooked on a charcoal or gas grill. Charcoal gives a salmon and better flavor.
Broiled and baked Salmon are cooked in your kitchen. You may use the same marinade for preparing the Salmon for broiling or baking. In addition to or in place of the marinade there is a lemon butter sauce sold by many supermarkets that can be used.
Grilled asparagus, marinade 1 bunch of asparagus spears overnight with olive, garlic, and lime marinade, grill, bake or broil. Do not for get charcoal adds a special flavor.
Left over asparagus. Puree asparagus in a blender, add one can of cream of mushroom soup. One can milk. heat in microwave until hot. This recipe is a mock cream of asparagus soup. mmmm
Orange sauce, my recipe for Orange sauce was originally created to be used on Asparagus. However it did not take long for people to realize that it is very good on salmon as well.
Take equal parts of mayonnaise and frozen Orange juice, add a table spoon of fresh Lime juice. Mix ingredients and server.
A variation on this is to add orange marmalade to thicken the sauce.
Curried chicken is a no-brainier -- 4 chicken thighs, garlic, curry, olive oil, lemon juice and rice.
Place 1 cup uncooked rice, 3 or 4 frozen chicken thighs, 1 clove garlic, 1 teaspoon lemon juice, 1 tablespoon yellow curry into a 4 quart microwaveable covered dish. You may also add roasted Pinion nuts, raisins or dates if you wish.
Remember add more curry to make chicken more spicy. You may also add a teaspoon of red curry to make it even more spicy.
Cook ingredients in microwave oven at half power for 45 minutes. Periodically stir the rice to keep it from becoming a solid block in the bottom pot.
For variety mushrooms, Pinion nuts. Remember to bring out the flavor of nuts they should be lightly roasted In a little oil before adding to the mix.
Curry pineapple, grilled curried pineapple is quite a nice add-on to a grilled salmon or rib meal. Slice pineapple in half to three-quarter inch to thick slices. Add curry powder, ground cinnamon,and cloves to pineapple slices. Grill on charcoal fire until till the pineapple starts to become translucent and softens. That's is all there is to it.
There are thousands of desserts, a couple of my favorites are a fruit salad using blueberries, blackberries, raspberries and mandarin oranges. Just mix fruit in equal portions and you're ready to go.
Make a topping for the fruit salad out of heavy cream confectioners sugar in equal portions, vanilla extract, a little brandy. Whip cream with ingredients added to create a very decadent topping. A variation on this is add Hershey's chocolate syrup to the topping. You end up with a chocolate whipped cream. mmmm
Another desert became out of this is to take layers of the topping Alternately with layers of raspberries in a parfait glass or wine glass. This is very nice for smaller gettogeathers.
